Fast and Furious Lunch Fixins

Yesterday I showed you how to create a book nook without spending a dime.

*Which clearly was a big hit with you pretty little readers....according to my stat counter.*

Today, we are talking about how to make a fast lunch without loosing your mind.

Which it what usually happens to me.
Planning a regular dinner menu is easy for me.

Making sure we have a good lunch in the midst of chores and schooling....

Always
Sneaks
Up
On
Me.
I know that many of you already know this little trick to creating a delicious little pizza.

And fast.

But....just in case.
I thought I would remind you about this fast and furious way to fix lunch.
Start with any left over rolls, buns, crusty french bread slices, (my personal favorite) or even tortillas can work in a pinch.
Add your favorite sauce.
I made pizza sauce last summer for the first time and looooved it!
And when I popped the lid off of the jar the other day....It felt like summer was here.
So yummy and fresh.
Nothing like canned or jar sauce from the store!
I also love this seasoning!
I got this at my local grocer and love that it has one of those grinder type tops.
Grate a little raw, farm fresh cheddar.
Add some mozzarella.
Or any other cheese that you have on hand.
Don't be afraid to mix cheese blends.
It's lovely to add complexity to a simple crusty cheese pizza!
Sprinkle.
Season.
Bake.
If I am feeling extra.....accommodating.
I'll fill some little bowls with extra toppings.
Like olives, onions, mushrooms, spinach, a little left over chicken or ground beef.

Then let the boys make their own.

But, in this case. I whipped these together in about 5 minutes.
Then toasted in the oven at 400 degrees, until nice and brown and bubbly.

And lunch was served.
You can add fruit and veggies to dip, on the side and round it out.

I want to add here....that if you are not using a baking stone. You are really missing out!
I got this bar stone pan from Pampered Chef, years ago. And it was so worth the money.
I use it multiple times a week.

Years ago when I was homeschooling I would do these with english muffins...the kids loved it! I would also cook up extra pasta whenever we were have spaghetti, then re-heat it the next day in a pot of simmering water for a few seconds. Drain, then toss with olive oil, pepper, and parmesan cheese. Easy peasy lunch!

We use a can of biscuit dough for the crust. Or if we have it dig out the middle of french bread and fill it full of sauce, cheese and left over meat. I like the bun idea.

Oh yum!! What a great idea to use buns for pizza! love it. Wish I could gobble up a whole stone to myself. But then I'd be the shape of the stone too :-/ ha ha!

I've been making quesadillas as our fast-easy-warm lunch a LOT.....and we're in need of some new ideas, lol. :) I bet my older kiddos could even prep these on their own....
